Wholewheat Couscous is versatile rice alternative, made using whole wheat durum flour and water. It is partially cooked making it very quick easy to prepare. Though we think of it as a grain, it’s actually a type of pasta.
Couscous is a good source of carbohydrates, fibre and is low in fat. It is perfect for replacing rice or quinoa as a side dish or in salads.
Place 1 cup of couscous into a heatproof bowl, add 2 tsp virgin olive oil and 3/4 cup hot vegetable stock (or water). Cover and leave for 4 mins. Fluff up couscous grains with a fork, season and serve.
For variety you can also add any of the following: grated lemon zest or finely chopped preserved lemon, a pinch of cinnamon, chopped dried apricots, sultanas and pine nuts, or shredded fresh mint.
